A Five-Star Market
For all these attractions and values, as well as to offer an appealing and unique proposal to both guests and local audiences, The Westin Palace, Madrid has carefully selected cuisines from the market. For 3 days, the selected restaurants will transport the market's aesthetic and its culinary specialties to the Palace in a surprising event held under a dome that is accustomed to hosting unique installations. This initiative has been enthusiastically welcomed by the market management and is part of the celebration of its 80th anniversary.
The initiative visually manifests as a representation of the Anton Martín Market under the dome and features a gourmet menu of 5 dishes beginning with a very Madrid-style Vermut with French fries. As the first course, there will be Corvina ceviche with octopus and shrimp, paired with coconut, mango, and avocado, an authentic recipe from the Pacific coast prepared by El Mono de la Pila. Next, a delicious duo of tacos created by Uriel Coria, chef of Cutzamala, one of the veterans of the market: Carnitas (confited pork served with corn tortilla and chili sauce) and Birria de Res (beef with guajillo chili served in corn tortilla with radishes, onion, and its broth). Continuing with international flavors, Yoka-ramen made with bonito and kombu, from Yokaloka, long recognized as one of the best ramen spots in Madrid, which has countless fans.
Less international and 'more local', Sergio Mayor, a seasoned chef from Madrid who has held various positions including head chef at Viridiana and personal chef to David Guetta, a project he left to open LaLopez at the market, will offer a Miso-marinated salmon supreme with osmotized pineapple and kefir. To conclude this eclectic culinary proposal, Hanabusa, the Japanese pastry shop in the market, has crafted a Matcha tea mochi filled with anko, white chocolate, raspberry, and nuts.
The menu will include wines from Bodegas de los Herederos del Marqués de Riscal and a wide variety of products from Mahou and Cervezas Alhambra, which has joined this initiative.
The format will be a table-served menu to comply with all health authority measures regarding hygiene protocols and social distancing, which is an absolute priority for The Westin Palace, Madrid.
